Thomas Colombo

One of the biggest personalities at Cathedral Quarter Hotel, Thomas is full of charm and charisma and a very friendly face to see behind the bar. His passion and enthusiasm for cocktails is infectious and is only matched by his expert skill and precision in the art of making mouth-watering drinks.
Following formal training at the most prestigious bartending school in his home country of Italy, he has taken his skills around the world and worked in bars in London, Ireland, Spain and Sydney to name just a few places.

Best described as a little and noisy man, with a lot of passion for his job.

Best part of the day is between 5 and 8pm. In Italy we call this 'aperitivo' and it is a fantastic time to have pre-dinner drinks and some nibbles and a good time to socialise with people.

Couldn't live without a Dirty Martini.

Favourite way to unwind is a Dirty Martini as aperitivo.

Best part of my job is the customers smiling after they have had a sip of one of my cocktails.

My inspiration is Dario Comini, owner and Bar Chef of the cocktail bar Nottingham Forest in Milan. A man of endless passion, knowledge and creativity.
